Gluten Free Tallow Waffle Fries

If there is one food that commonly is contaminated with gluten, it is fries. Most restaurants use the same fryer for their french fries as gluten containing foods like onion rings and chicken tenders. The only place I trust for gluten free french fries in Cali is In-In-Out Burger. This is because they have a dedicated fryer for only french fries. The only issue here is they fry their fries in inflammatory sunflower oil which I personally try to avoid which helps keep my lupus in remission. Instead, I make my own french fries that are fried in grass-fed beef tallow. Tallow is an excellent fat to fry in compared to vegetable oils and seed oils. While I typically follow a keto diet, when I want to splurge on a snack its these. These are also a toddler favorite!

Recipe: Beef Tallow Fries

Ingredients:

5lb Organic Russet Potatoes

32 Oz Grass-Fed Beef Tallow (I use Fatworks (dedicated gf Facility)

Sea Salt to taste

  1. Peel the skins off of all the potatoes.

  2. Using a waffle fry slicer slice all the potatoes, if you do not have one cut the potatoes into the fry shape you would like.

  3. Fill a large bowl with water and ice and let all the fries soak for at least 30 minutes.

  4. Please note you can make smaller batches of these fries, I personally like to make a bunch at once and let them cool and freeze a lot. I then air fryer them when I want to reheat and they're amazing.

  5. Fill a pot or saucepan with the tallow and heat to 350 degrees.

  6. Strain the fries and place on towels or paper towels to dry them off.

  7. Using a large spoon or tongs place about a cup worth of fries in the pot and fry until golden.

  8. line a plate with paper towels and place the fried fries on in to blot the tallow off and then salt to taste.

  9. once finished frying all the fries you can use cheese cloth and a strainer to strain the tallow into a jar and save in the fridge for next time.
